Many life experiences have led me to this place and time… join me as I spend a summer in a small village in Greece where generations of my family have lived and where I now hope to put down a few roots. Along my journey I will write letters to you to share my experiences and hopefully inspire you to create your own wherever you live or travel…
Dear Friend,

I have never cooked a chicken before... I cook beef, pork, lamb, etc. with no problem, but I can barely even get myself to buy a chicken at the market. Jason cooks the chicken in our household and I would have happily added that requirement in our marriage vows if he hadn't been so willing.

Well... our neighbor Yannis proudly delivered half of his freshly plucked chicken the other day and a moral dilemma began. Of course I cheerfully accepted his generous offer, but who was going to cook the chicken!?! I couldn't throw it out since it was an obvious sacrifice on his part. I may have momentarily considered inviting a neighborhood dog inside our gate to "accidentally" share our chicken with. But, that is not what this summer is about. This is a summer of new experiences... of stepping outside of my comfort zone and learning new things.

So, may I present... my first cooked chicken! I'm not sure it was the easiest chicken to deal with for a first poultry experience. It was literally half of the chicken and freshly plucked. There was a bit of trial and error with a large knife and some elbow grease, but I cut up the chicken (to a chorus of cheers and pep talks from Caroline and Kolya), added some oil and water, potatoes, lemon, chicken seasoning, sea salt and oregano and baked it for about two hours at 180 degrees Celsius. It was really fabulous if I do say so myself! Our neighbor came over and was quite proud of my results too.

    Good Job! it looks lovely, at least you didn't have to pluck it. I had to that when I was in Australia living with a host family and the smelled to have to dip chichen in hot water to pull off the feathers. Your first chicken dish looks wonderful!

    I'm very proud of you for cooking the chicken and it looks delicious!!! I know how hard it is to get over the ew factor of raw chicken. ;)

    Oh and I can't imagine cooking freshly plucked chicken. I'm used to my packaged boneless chicken from the store.
